Red Lentil Dahl is my favorite go to food for many different reasons. Firstly, its cheap and you can buy it in bulk. Secondly, it takes max 15 minutes. Finally, it’s delicious and the possibilities are endless. This turmeric version is my favorite and has an indian taste to it.
Turmeric Red Lentil Dahl
- 1 cup dry red lentils
- 1/2 cup broccoli
- 1/3 cup green peas
- 2 tbsp turmeric
- 1 tbsp garlic powder
- 1 tsp chili powder
- 1/2 tsp salt
- 1 cup cooked white rice (can you brown rice or quinoa as well)
- 1/4 cup cherry tomatoes, sliced optional but highly recommended
- Bring 2 cups of water to a boil. Rinse lentils and add to boiling water. Reduce heat to med-low and add all spices as well as the broccoli and peas. Let cook for approx. 10 minutes, stirring occasionally. Serve over rice or quinoa. Add toppings (I suggest cherry tomatoes, avocado, and red chili flakes).
